September Recipe: Roasted Garlic Mashed Potatoes

Silky smooth and richly satisfying—everyone loves this dish! Roasting brings out the sweetness and nuttiness of the garlic to give more dimension to the mashed potatoes. It's even better with garlic you've grown yourself; check out our ready-to-plant varieties available now.

2 whole heads garlic
1 tablespoon olive oil
4 Yellow Finn or other yellow potatoes, peeled, cut in 1/2-inch cubes
1 tablespoon butter
1/2 to 3/4 cup hot milk
salt and pepper

GARNISH
2 tablespoons chopped Italian parsley, 1 tablespoon chopped chives


Preheat oven to 350˚F.

Slice tops off of the garlic, toss with the olive oil, then put the heads, tip-side up, in a small baking dish and cover loosely with foil. Bake for 25 to 30 minutes or until garlic is soft and tender. While garlic is roasting, boil or steam potatoes until tender. Drain well. Cool the garlic and squeeze out pulp. Mash pulp with a fork until puréed.

Mash the hot potatoes while mixing in the butter. Beat in the hot milk gradually, mixing until soft and smooth. Stir in the roasted garlic purée. Add salt and pepper to taste. Transfer to a warm serving dish, and garnish the dish with parsley and chives. Serve immediately.

February Recipe: Roasted Potatoes with Garlic and Herbs

The aromas of roasting potatoes, herbs and garlic make this an irresistible dish, and it is even better with your own home-grown potatoes from Renee's Garden.

Ingredients:
3 T olive oil
1 dozen small or 6 medium potatoes, cut into 1/2 inch slices and patted dry
1/2 to 1 head garlic (or to taste) separated into cloves and peeled
4 to 5 sprigs, 4 to 6 inches long, rosemary, thyme or basil
 

Preheat oven to 400 degrees F

Spread olive oil in bottom of a 9x13 inch baking dish. Toss potato slices and garlic cloves in baking dish to coat with oil, then arrange in a single layer. Lay the sprigs of herbs on top of the potatoes. Cover the pan with foil or a cookie sheet and bake 20 minutes. Uncover and bake 15 to 20 minutes more or until potatoes are tender and begin to brown. Carefully remove herbs and discard. Serve immediately.
